Dieses Gebäude schaut echt nicht aus als würds in Wien stehen??

…mit viel Gebackenem, dreimal Radio, zwei Restaurantbesuchen – und wie immer, den besten Links der letzten Tage.

Seit dem letzten Zuckersüß habe ich nochmal Cheesecake-Marmor-Brownies gebacken, ein Rezept für Apfel-Tahini-Schnecken mit Sesamstreuseln getestet, Kuchen mit Radicchio (!), Haferkekse und eine sehr amerikanische Torte gemacht.

Ich habe außerdem ein paar sehr interessante Dinge gekocht, die ich hier noch festhalten will: Highfoodality’s (bzw. Nigel Slater’s) Karotten-Kardamom-Suppe mit Ricotta-Klößchen und Kampot-Pfeffer mochte ich sehr, und die Pfeffersorte gibt hier den Ausschlag, habe ich festgestellt. Am gleichen Abend habe ich noch in Anlehnung an Nik Sharmas Sesame Tofu für die NYT Tofu in Sesam paniert (schon cool aber der Tofu blieb fad, den muss ich nächstes Mal besser marinieren) und auf Brokkoli mit Salzzitrone und Knoblauch serviert. Diese Idee stammt von Nargisse Benkabbou von My Moroccan Food.

Sizilianische Caponata ist mir erstmals bei einem Averna-Event mit Anna Sgroi, das ich für die Effilee in Hamburg besuchen durfte, begegnet. Das Splendido-Magazin hat ein „Rezept“ dafür, ich habe es sehr lose nachgekocht (mit Melanzani, Karotte, Sellerie, Frühlingszwiebel, Pinienkernen, Rosinen, Marsala, Balsamico und großzügig Olivenöl) und beschlossen, das jetzt öfters als veganen Appetizer aufzutischen.

Dreimal im Radio

Ich habe in drei Wochen drei Radiobeiträge gestaltet. Die Sendung über „Palatschinken, Crêpes und Co.“ im Moment Kulinarium und mein Beitrag über das großartige Wiener Projekt „Raufschaumuseum“ sind leider schon wieder depubliziert. Meine Sendung über Spezialiätengeschäfte mit ausländischem Sortiment ist hier in der Radiothek noch bis kommenden Freitag nachzuhören.

Zweimal im Restaurant

Ich war endlich wieder im Restaurant! Zweimal gleich mit beeindruckendem Menü: Fünf Gänge mit viel Ferment und Koji-Schimmel bei Frau Bernhard × Johannes Schartner und vierzehn voller Überraschungen bei Mraz&Sohn.

Cream-filled baklava – Taste of Beirut
Eine Einführung in verschiedene arabische Gebäckfüllungen (s. a. Namoura, Namoura bil ashta)

These pastries are very popular in Beirut and Damascus, where they are called warbate or shaybyate. These warbate (the word refers to the gesture of folding the phyllo dough to enclose the filling) can be filled with two things: Ashta which is a clotted cream or nuts (usually pistachios) chopped coarsely and held together with syrup. The ashta can be pure and authentic, (like the one sold in Iraq made from water buffaloes ) or, as is usually the case, a pseudo ashta made with milk and a thickener like cornstarch or semolina. The milk used needs to be full fat, as it should contain as much cream as possible, and is first clotted with an acid, like vinegar or fresh lemon juice. The resulting clotted milk is called areeshe, and has a consistency similar to cottage cheese. This areeshe can be consumed on its own with honey to sweeten it (or grape or date molasses) as a dessert; this is considered a very traditional dessert and is often served in eateries in the mountains and rural areas.

Zusätzlich finde ich zum BfV mehrere IP-Adressen, die ins Straßburger Rechenzentrum des Hostinganbieter velia.net zeigen. Die haben die E-Mail-Adresse 3a6_tkue@bfv.bund.de. Ihr kennt das Spiel schon. Einmal im Organigramm nachschauen. Abteilung 3 ist für Maßnahmen nach Artikel 10 GG zuständig — das regelt, in welchen fällen Behörden Menschen z.B. abhören können. Das TKUE, das steht dann wohl für Telekommunikationsüberwachung. Also habe ich hier vermutlich die IP-Adressen der Server gefunden, die für das Bundesamt für Verfassungsschutz Menschen ausspionieren. In einem Französischen Rechenzentrum eines amerikanischen Anbieters. Lasst das mal nicht das Zentrum für digitale Souveränität hören!

Ein Blick in die nähere österreichische Vergangenheit.

Das gesamte Land war zwischen „Rot“ und „Schwarz“ aufgeteilt, bis hin zu den Schülervereinen (AKS und Schülerunion), Autofahrerklubs (ARBÖ und ÖAMTC) oder Sportvereinigungen (ASKÖ und Sportunion). Jobs in der ungewöhnlich großen verstaatlichten Industrie und in der Verwaltung wurden ebenso nach Parteibuch vergeben wie Gemeindewohnungen. Erst ab den 1980ern wurde die Kritik am Proporz so laut und die Verstaatlichte durch Wirtschaftskrisen und Privatisierungen so klein, dass das System zusehends bröckelte.
Objektivierungsverfahren und Personalkommissionen entstanden – und tatsächlich ist die Parteibuchwirtschaft heute auf vielen Ebenen nicht mehr annährend so dominant wie vor 40 oder 50 Jahren. Was man übrigens auch am ständig sinkenden Mitgliederstand der Großparteien erkennt. Ein Parteibuch bringt heute schlicht weniger Bonuspunkte im Alltag.

Dieser Verriss hat mich sehr belustigt.

Sadly, Emily cannot speak French. This fact becomes more and more of an issue for her this series. You’d think she would have given her lack of language skills more thought, given that her USP is being “in Paris”. She frequently initiates conversations with strangers in English. At one point she gets annoyed that the people in her office have decided to hold a meeting in French, the language of their nation. In the fourth episode she sends a letter of apology to her friend Camille about sleeping with Gabriel, to which Camille responds, “Leave me alone, you illiterate sociopath”. Camille speaks for all of France here. Indeed, I believe Leave Me Alone, You Illiterate Sociopath is the French title of the show.

There are crossword puzzles and crossword puzzles. The kind familiar to most New Yorkers is a mechanical test of tirelessly esoteric knowledge: “Brazilian potter’s wheel,” “East Indian betel nut” and the like are typical definitions, sending you either to Webster’s New International or to sleep. The other kind, prevalent in Great Britain but inexplicably nonexistent in the United States apart from The Nation and an occasional Sunday edition of The New York Times, is a test of wits. This kind of puzzle offers cryptic clues instead of bald definitions, and the pleasures involved in solving it are the deeply satisfactory ones of following and matching a devious mind (that of the puzzle’s author) rather than the transitory ones of an encyclopedic memory.
